The Best Harvest Bowls

This recipe is a copycat recipe with inspiration from Sweetgreen's harvest bowl but with what I consider a few even more delicious additions.

In place of balsamic dressing I found honey lemon dressing tasted better and was more fitting, feta was overall more preferred among tasters versus goat cheese, and Brussels sprouts add one more veggie and will help get more servings out of it. Pan seared chicken was also used in place of roasted for a quicker option.

Simply put we are obsessed with these meal in one bowls, they are one of the tastiest healthy fall recipes and we just can't get enough of them! Once you try them you may just start making them weekly like we are lately, and you can switch them up with different toppings (see ideas below).

They are loaded to the max with flavor and wholesome goodness. They make an excellent dinner and leftovers are perfect for meal prep for lunch the following day.

It's true that roasting Brussels sprouts is the best way to go because my kids have been asking for more of those "little lettuce balls" lately. I'm almost shocked because most kids don't care for Brussels sprouts but this cooking method takes them to a whole new level making them almost something entirely different.

Once roasted they become nice and mellow, almost sweet, with a slightly rich and nutty toasted flavor. And I love the texture, nothing mushy and overly soft. They have a nice tender bite to them.

And balsamic vinegar makes just about anything good right? It works wonders here for Brussels sprouts even just this small amount, a little goes a long way.

And it's all finished off with a bright lemon bacon maple dressing. Talk about one delicious salad! And something new for a change.

It's a salad that will give you one more reason to look forward to fall every year and all those delicious pears this time of year.

This salad is the perfect reminder that everything is better with bacon. But really, I do love the way the pears and bacon compliment each other here.

It's a match meant to be and a flavor combination I should be using more often.

Pear Bacon and Brussels Sprout Salad

Ingredients Needed for the Salad

  • Bacon
  • Fresh Brussels sprouts
  • Fresh parsley
  • Pecans
  • Pears
  • Gorgonzola cheese
  • Shallot

Ingredients Needed for the Dressing

  • Olive oil
  • Bacon drippings
  • Lemon
  • Dijon mustard
  • Maple syrup
  • Salt and pepper

How to Make Brussels Sprout Salad

  • Cook bacon in a skillet. Transfer bacon to lined plate and reserve rendered bacon drippings for dressing.

  • In a large bowl toss together Brussels sprouts, cooked bacon, parsley, pecans, pears, gorgonzola and shallots. Toss with dressing and serve.

How to Make the Dressing

  • Whisk together all dressing ingredients in a mixing bowl or shake together well in a jar. Stir or shake again just before pouring onto salad.
  • Note if it's chilled it will need to be warmed just slightly as the bacon drippings solidify once chilled.

Can I Make This Salad in Advance?

Once you add the dressing the salad will hold up well for about an hour - but keep in mind the pears edges can brown so if you want to add dressing to soften up the Brussels sprouts a little first just wait to add those pears until later.

You can definitely shred the Brussels sprouts one day in advance though and make the dressing a day in advance (then gently rewarm as the bacon grease will solidify.

Can I Use a Different Kind of Cheese?

Goat cheese would work well hear or feta would be another good option.

Pear Bacon and Brussels Sprout Salad

A delicious autumn pear salad that's brimming with bacon, nutty toasted pecans, tangy gorgonzola cheese, all with a base of finely shredded raw brussels sprouts. So delicious! 

  • 6 slices (6 oz.) bacon, (chopped )
  • 14 oz. brussels sprouts, (bottoms trimmed, shredded*)
  • 1/2 cup sliced fresh parsley
  • 1 cup pecans, (toasted and roughly chopped)
  • 2 bartlett pears, (cored and diced small)
  • 1/2 cup gorgonzola cheese**
  • 2 Tbsp minced shallot

Dressing

  • 3 Tbsp olive oil
  • 2 Tbsp rendered bacon drippings
  • 2 1/2 Tbsp fresh lemon juice
  • 1 tsp dijon mustard
  • 1 Tbsp maple syrup
  • Salt and freshly ground black pepper
  1. Cook bacon in a non-stick skillet over medium-high heat until browned and just crisp, about 6 - 8 minutes. Transfer bacon to plate lined with paper towels to drain (it helps to use a spatula and press bacon against side of pan to drain excess bacon drippings back into the pan) and reserve rendered bacon drippings for dressing.

  2. In a large bowl toss together brussels sprouts, cooked bacon, parsley, pecans, pears, gorgonzola and shallots. Toss with dressing and serve. 

For the dressing:

  1. Whisk together all dressing ingredients in a mixing bowl or shake together well in a jar. Stir or shake again just before pouring onto salad. Note if it's chilled it will need to be warmed just slightly as the bacon drippings solidify once chilled.

  2. *First half the brussels sprouts then thinly slice through the width so pieces will separate. 

    **If you prefer a more mild less pungent cheese goat cheese may be substituted.

The Perfect Fall Recipe

The favors of this salad are so good and they all blend so well. Never when I was younger would I have thought that one day I'd be eating RAW brussels sprouts but here I am :).

The only way I can eat raw brussels sprouts though is when it's like so, with a good dressing and the right additions.

How to Shred Brussels Sprouts

There are a few ways you can shred/shave the Brussels sprouts:

  • You can just thinly slice them up by hand using a sharp knife, but word of advice, watch your fingertips!
  • Or you can use a mandolin (but personally I feel like this takes just as long as slicing them up by hand).
  • Or you can use the slicing attachment you may have gotten with your food processor.

Slicing all those little Brussels sprouts up is the only thing that really takes much time with this salad - everything else is a total breeze.

The thin slices though are a must, eating a whole raw Brussels sprout covered in dressing would just be weird, and awkward, and grossly crunchy...and just all wrong.

These fine thin shreds are the perfect base for a salad, a delicious salad like this one!

Shredded Brussels Sprout Salad with Romano Cheese Toasted Walnuts and Lemon Vinaigrette

Brussels sprouts are thinly shredded for a crisp tender texture, and they're tossed with walnuts, romano cheese and a bright lemon dressing. A delicious autumn salad recipe!

  • 1 lb brussels sprouts, (bottoms trimmed, very thinly sliced*)
  • 1/2 cup walnuts, (toasted and chopped**)
  • 1/2 cup finely shredded Romano or parmesan cheese
  • 1/4 cup extra virgin olive oil
  • 2 Tbsp fresh lemon juice
  • 1 1/2 tsp dijon mustard
  • Salt and freshly ground black pepper
  1. Add shredded Brussels sprouts, about 2/3 of the walnuts and 2/3 of the Romano cheese to a medium salad bowl. 

  2. In a small mixing bowl whisk together olive oil, lemon juice, dijon mustard and season with salt and pepper to taste (about 1/4 tsp of each).
  3.  Pour dressing over salad and toss to evenly coat. Sprinkle with the remaining 1/3 of the walnuts and cheese. Serve within 2 hours (chill if not serving immediately and toss before serving).
  1. This can be done carefully by hand using a sharp knife (watch your fingertips!), with a mandolin or using the attachment on a food processor.
  2. To toast the walnuts preheat oven to 350 degrees. Spread walnuts out on a baking sheet and toast in preheated oven until slightly browned, about 5 - 8 minutes.

Shaved Brussels Sprout Pomegranate Salad

I made the simple salad dressing used here with the new Best Foods Organic Mayonnaise (note that this product is also labeled as Hellman's Organic Mayonnaise in some areas. Same product, different name). I love that this mayonnaise is made with ingredients I can trust, I also love that it's made with organic cage-free eggs! I started buying cage-free eggs about eight months ago so I was so happy to see a mayonnaise that's made with cage-free eggs as well. There are several new Hellman's Mayonnaises now available at Walmart so be sure to keep an out for them so you can try them yourself! There's Hellman's Organic Spicy Chipotle Mayonnaise, Organic Roasted Garlic Mayonnaise, the Organic Original Mayonnaise and there's also an egg-free version which is the Hellman's Carefully Crafted Dressing and Sandwich Spread. I haven't tried them all yet but I'm sure that will change in no time!

Summer or Holiday Salad Recipe

This may not be one of your typical summer salad recipes, but you may as well make it anyway and surprise everyone with something out of the norm! I know if I showed up to a weekend get-together and this healthy, delicious salad was there I'd want the whole bowl to myself - forget that boring, skimpy side salad. If you are having a hard time finding pomegranate this time of year check the frozen fruit section, you may find some there or substitute dried cranberries until fall and winter roll around.

I highly recommend this delicious side dish for your holiday menu, too. Pomegranates are in season during the winter, and sweet potato give you that cozy holiday season flavor.
