Coconut Blueberry Oatmeal

Of course, it starts with old-fashioned rolled oats but you can use steel-cut oats for a healthier swap. Then instead of adding the traditional boring water or milk, I added canned coconut milk and coconut water. It gives it a unique yet delicious, raw coconut flavor, and a wonderfully creamy texture. It's also a great choice for our vegan friends. You can also experiment with almond milk, soy milk, or other dairy-free milk.

If you are gluten-free, just make sure you're checking for certified gluten-free oats.

Some of you may like your oatmeal without added sugars. I haven't quite gotten that far :) but you most definitely could omit the sweetener used in this recipe, which makes it healthier. Some good sweetening options are maple syrup, flavored protein powder, a liquid sweetener like agave, or stevia

This recipe is a great way to get excited about eating oatmeal again! With oatmeal, I'm always eating it in phases. I'll eat it for a few weeks and then I'll get sick of it and go a few weeks without, but the more variations I have on it, the more I'll make it without getting bored.

Blueberry Overnight Oats Recipe

I love peanut butter oatmeal, apple cinnamon oatmeal, overnight oatmeal, banana oatmeal, baked oatmeal, old-fashioned oats, and chocolate oatmeal and now, I've got this delicious Blueberry Coconut Oatmeal to add to that list (all of those recipes you can find on my blog, just use the search box on the right side. Oh, except peanut butter. For that one, I just add 1 Tbsp of peanut butter or another nut butter and a little honey to the basic recipe after it's cooked.)

To make this recipe as overnight oats, just check the instructions on my overnight oatmeal recipe. I like to use this for meal prep by mixing it all in a large bowl, then spooning it into mason jars, adding your toppings, and then storing it in the fridge.

Substitutions for Coconut Blueberry Oatmeal

As a side note, I know fresh blueberries aren't in season in many places right now, and they can be pricey, so you can omit them or just replace them with another fruit until Summer rolls around. But once Summer gets here be sure to try it with blueberries, they add a wonderful natural sweetness and flavor! Consider swapping the blueberries out for seasonal fruits—especially berries like raspberries or strawberries!

Consider adding more protein with a few tablespoons of Greek yogurt, almond butter, cashew butter, or protein powder.

Other healthy swaps could be adding a teaspoon of chia seeds, flax, or other superfoods.

Coconut Blueberry Oatmeal

A creamy, tasty oatmeal that's loaded with blueberries, almonds and a delicious coconuty flavor. Perfect for breakfast any day of the year!

  • 1 (16.9 oz) bottle Zico Coconut Water
  • 1 1/4 cups light canned coconut milk (, plus more for serving if desired)
  • 2 cups rolled oats
  • 1/4 tsp fine sea salt
  • 1/4 tsp coconut extract or vanilla extract
  • 1 1/2 Tbsp honey (, brown sugar or coconut sugar (or to taste))
  • 2/3 cup toasted unsweetened or sweetened flaked coconut
  • 3/4 cup fresh blueberries
  • 1/3 cup chopped almonds ((optional))
  1. Bring coconut water, coconut milk, oats and salt to a boil. Reduce to low heat and let simmer 5 minutes, stirring occasionally. Remove from heat, stir in coconut extract and sugar. Thin with water or more coconut milk if desired. Let cool 2 minutes. Pour into individual bowls, add another 2 Tbsp coconut milk to each bowl if desired and top each serving with coconut flakes, blueberries and almonds.

Easy Cilantro Lime Shrimp Recipe

Could there be a better way to enjoy summer than with this delicious tropical Cilantro-Lime Shrimp with Coconut Rice? I recently shared a salmon recipe with coconut rice and I fell absolutely in love with it so I decided to make something else along those lines and keep a great thing going.

Believe it or not, with THIS recipe I was able to get my husband and my daughter who don't like shrimp to eat it and love it!

It has such a bright, fresh lime flavor and the cilantro and garlic add just that much more deliciousness.

And this coconut rice, don't get me started! I've been obsessed for the last few weeks since I first tried it (seriously though, where has it been all my life?) and I got my mom hooked too, she's been eating it probably 5 times a week since she's on a low gluten diet.

It's just so much more exciting than plain white rice and it's so delicious plain on its own.

It has such a rich flavor, a slightly creamy texture (but don't worry it's not mushy) and the coconut undertones will leave you craving more.

If you, like I have been, are trying to get someone else in your family to enjoy shrimp then this may likely be the recipe to do just that!

And better yet this is a quick and easy dish to prepare - all around dinner win! Plus it can be made into a fun family dinner if you serve it up island style with pineapple and some kind of tropical punch, then decorate the table with bright, tropical colored flowers.

Grilled Salmon with Mango Salsa

I absolutely love the combination here of the slightly charred lime salmon with the sweet, fruity mango avocado salsa and the rich and creamy coconut rice. It is all a match made in Heaven.

The salmon is perfectly seasoned and cooked, and has those nice grill marks giving it a tempting lightly charred flavor. And this colorful salsa has the best blend of flavors and textures! It complements the salmon so incredibly well.

Then the bed of coconut rice is the perfect base for the salmon and salsa. If you haven't had coconut rice yet, you need to make it today! It is one of my favorite rice dishes that I make all the time and it's so easy to prepare.

Grilled Salmon Ingredients

  • Salmon fillets - the main ingredient. Rich in protein and nutrients!
  • Olive oil - keeps the exterior for drying and sticking.
  • Lime - adds so much bright flavor.
  • Garlic - adds another layer of flavor.

Mango Avocado Salsa Ingredients

  • Mango - adds fresh natural sweetness.
  • Red bell pepper - adds more texture and color.
  • Red onion - a little goes a long way here. Rinse it so it's not so harsh first.
  • Avocado - adds a delicious creaminess.
  • Cilantro and lime - adds classic Mexican flavors to the salsa
  • Olive oil and coconut water - this isn't a must here but I like that bit of richness and moisture it adds.

Coconut Rice Ingredients

  • Coconut Water - it adds flavor to the rice.
  • Canned coconut milk - don't confuse this with coconut milk beverage. The canned stuff is much creamier and richer.
  • Jasmine rice - stick with jasmine, it has more flavor than plain long grain white rice.

How to Grill Salmon

  • Whisk together lime juice and zest, garlic, olive oil, salt and pepper in large baking dish.
  • Place salmon in baking dish and let marinate 30 - 60 minutes.
  • Grill salmon until heated through.
  • While the salmon grills, make the coconut rice (you make it like you do regular rice, just with coconut milk) and mango avocado salsa.

How Long Do You Grill Salmon?

This recipe calls for 6 oz salmon fillets. At that weight, you'll need to grill the salmon for 3 minutes on each side over medium-high heat.

Can I Bake the Salmon in the Oven?

During the winter months, you can also cook this salmon in a grill pan or bake it in the oven. The baked version won't be quite as good because you won't get the light char but when it's zero degrees outside it's what we do.

To do so, bake salmon in a greased 13 by 9-inch baking dish in preheated 400 degree F oven for 12 - 15 minutes.

Tips for the Best Grilled Salmon With Mango Salsa

  • After you've sliced the red onion for the mango avocado salsa, rinse it under cold water to lessen its bite.
  • Make sure your mangos are ripe before dicing them. You don't want hard, flavorless mango chunks in your salsa!
  • For creamier coconut rice, use full-fat coconut milk.

Grilled Salmon with Mango Salsa and Coconut Rice

Here you have one of the ultimate summer meals! Flaky tender salmon is topped with a bright and creamy mango avocado salsa and served alongside of bed or rich coconut rice. Sure to impress anyone lucky enough to try it!

Lime Salmon

  • 4 (6 oz) skinless salmon fillets
  • 3 Tbsp olive oil, (plus more for grill)
  • 2 tsp lime zest
  • 3 Tbsp fresh lime juice
  • 3 cloves garlic, (crushed)
  • Salt and freshly ground black pepper, (to taste)

Coconut Rice

  • 1 1/2 cups Zico Coconut Water
  • 1 1/4 cups canned coconut milk
  • 1 1/2 cups jasmine rice, (rinsed well and drained well)
  • 1/2 tsp salt

Avocado-Mango Salsa

  • 1 large mango, (peeled and diced)
  • 3/4 cup chopped red bell pepper ((1/2 large))
  • 1/4 cup chopped fresh cilantro
  • 1/3 cup chopped red onion, (rinsed under water and drained)
  • 1 large avocado, (peeled and diced)
  • 1 Tbsp fresh lime juice
  • 1 Tbsp olive oil
  • 1 Tbsp Zico Coconut Water
  • Salt and pepper, (to taste)

For the salmon:

  1. In an 11x7-inch baking dish whisk together olive oil, lime zest, lime juice, garlic and season with salt and pepper to taste (a fair amount of each). 

  2. Place salmon in baking dish, cover and allow to marinate in refrigerator 15 - 30 minutes, then flip salmon to opposite side and allow to marinate 15 - 30 minutes longer. Preheat a grill over medium-high heat during last 10 minutes of marinating.
  3. Brush grill grates with oil. Place salmon on grill and grill about 3 minutes per side or until just cooked through (turn carefully as the salmon will be fragile).

For the coconut rice:

  1. While salmon is marinating prepare coconut rice. In a medium saucepan bring coconut water, coconut milk, rice and salt to a full boil. 

  2. Cover and simmer until liquid has been absorbed (there may be just a little bit of excess liquid in center which you can drain off), about 20 minutes. Fluff with a fork, then let rest 5 minutes.

For the mango avocado salsa:

  1. While the salmon is grilling prepare salsa. In a medium bowl toss together mango, bell pepper, cilantro, red onion, avocado, lime juice, olive oil and coconut water. Season with salt and pepper to taste.

  2. Serve salmon warm with coconut rice top with avocado mango salsa.
  • For creamier coconut rice, use full-fat coconut milk.
