Sesame seed butter would be a good alternative for peanut butter and unfortunately the rice krispies wouldn’t work here in place of oats.

You need to bring just sugar, butter, and milk to boil, then allow to boil for one minute. I’ve made these many many times and that has always been reliable without a thermometer. Comes out solid, not crumbly or tacky.
Sometimes I add more oats, but I also like to add finely chopped walnuts and raisins and less sugar

You didn’t boil it long enough, I’ve made them several times and no problem. The sugar has to reach 230, hence the reason for boiling for 1 minute after boiling point.

You get a runny mess that comes out so thin that when set it crumbles and doesn’t keep its cookie shape. Not enough oats for the other ingredients either. Shane on me for following a recipe for the easiest cookies in the world. Eye ball the heated/melted mixture and combine oats until you get dough. I needed these for a neighbor. I have trash instead and out of ingredients 🙄
